This stuff's good

I'm not a huge fan of chicken casseroles or chicken salad for that matter, but this recipe is, besides being quick and easy, very tasty. Sinfully good.

Hot Baked Chicken Salad

4 cups cooked chicken
2 cups thinly sliced celery
1/4 cup diced onion
2 cups mayonnaise
1 cup slivered almonds
2 cups (8 oz) shredded cheddar cheese
1 cup finely chrushed potato chips

Combine chicken, celery, onion, mayonnaise and almonds, stirring well.

Spread the mixture into a 9x13x2-inch baking dish and top with the cheese and crushed potato chips.

Bake at 450 for 10 to 15 minutes or until thoroughly heated.

Serves 6 to 8.

Tell your relatives that it's a secret recipe and they'll think you're a brilliant cook.

Please don't try to make a low-fat version (i.e., fake mayo, fake cheese, and Wow! potato chips). It doesn't work.

This recipe is from the cookbook Creating a Stir.

wish you could convince my wife that most of those low fat/no fat subs simply wreck the food, and the reason you lose weight when you eat them is because they make the food unpalatable.
