Mexican Chicken Chowder
4 Boneless, skinless chicken breasts (I put in crock pot frozen)
2 Cans 99% fat free Chicken Broth
2 Cans Black Beans (Rinsed)
2 Cans Rotel Brand Tomatoes (these are diced tomatoes with green chilies)
1 Can Corn (Drained)
½ pkg of Taco Seasoning mix
Dash of Chili Powder (depending on your preference)
Dried diced onions to taste.
Just dump it all in a crock pot (I put chicken at bottom) and cook on
low all day. When ready, take out chicken breasts and cut up into bite
size pieces (actually you will be able to pull it apart with a fork) and stir back in to mixture.
This makes a lot! You can freeze the leftovers in one cup servings for later use.
Serving size = 1 cup. 3 WW points per serving.
Hmmmm. Sounds easy. This is always a plus in my book. One question: in what aisle will I find the dehydrated onions?

Oops. I should have been more clear about that. I meant Dried, diced onions, available in the aisle with al the herbs and seasonings.
You could just dice a large fresh white or red onion, but the dried ones make it so easy (No slicing. No dicing).

That's a recipe for exceedingly overcooked, tough, tasteless chicken.
