I found this recipe at a Weight Watchers community site. It is reportedly originally from Betty Crocker's Healthy New Choices cookbook. One serving has 65 calories, 1 gram of fat, and 2 grams of dietary fiber. This equates to 1 (yes, I said one) WW point per serving.
- 2 Tbs. fresh lime juice
- 2 tsp. cornstarch
- ½ tsp. ground cumin
- ¼ tsp. sea salt
- ¼ tsp. fresh ground pepper
- 1½ pounds raw, peeled, deveined shrimp (rinsed and dried)
- 1 large yellow bell pepper, chopped
- 1 large red bell pepper, chopped
- 1 medium onion, chopped
- 1/3 cup chicken broth
- 2 cloves garlic, pressed
- ⅛ tsp. cayenne pepper
- 2 Tbs. fresh parsley
- Cooking spray
Mix lime juice, cornstarch, cumin, salt and pepper in medium glass or plastic bowl. Stir in shrimp. Cover and refrigerate 1 hour.
Spray 12 inch non-stick skillet with cooking spray; heat over medium heat. Add bell peppers, onion, broth, garlic, cayenne pepper, and parsley. Stir-fry for 2 minutes. Add shrimp mixture; stir-fry 3 to 4 minutes or until shrimp are pink and firm.
Makes 6 servings.
